I agree. One director makes it easier to troubleshoot, however provides no redundancy. If you need redundancy, go with two directors for the fabric.

You may also want to look at Foundry Networks (now Brocade) ServerIron. They are fairly resilient and depending upon the model, scalable as well.

For smaller solutions, LVS is just a good solution.

As far as SonicWalls go, stay away. I have set some up for customers, and they leave a good bit to be desired. Netscreens are good. Cisco ASA5505/5510 firewalls are probably the best for the money....
