I not sure if you are supposed to be able to see a significant change in the system's performance. Do you have a 64bit operation system on the server?
I do know that some application run better on 64bit server and other applications run only on 64bit servers.
We also recently bought 64bit servers to install exchange 2007 and they have been performing really well.
